Medium roast coffee is considered to produce the highest concentraion of coffee oils and reveal the flavour profile of the country of origin of the beans. It is roasted at lower temperatures for a shorter period of time until just after the first "crack" of the beans when they expand and the natural sugars caramelise. Medium roast coffees retain the the delicate flavours and aromatics of the beans.
