Dark roast coffee is roasted longer and to a higher temperature than medium roast coffees. This means that the beans go through what is known as first and second "cracks" as the beans expand and the natural sugars caramelise. A dark roast provides a fuller bodied coffee that has subtle caramel flavours with a hint of smokiness as the roast flavour becomes more prominent. Dark roasted coffee also tends to have a lower acidity compared with other more lightly roasted profiles.
